Saffron is obtained from the purple flower of a plant called Crocus Sativus Linnaeus and is changed into commercial product of saffron after drying. The major producers of commercial saffron are Iran, Greece, Spain and Indian Kashmir. However, Iran accounts for the 90% of the saffron produced in the world. Iranian saffron is desirable due to its organoleptic characteristics (color, odor and flavor) as well as its competitive price.
Each saffron plant, flowers in October and may yield more than one flower per season. They bloom at night and it is handpicked in the morning before sunrise in order to avoid any damage.
